Rich Rosa: At Mario and Salvo’s Pizza on East Genesee Street in Dewitt, Owner Gus DiMarco is making a classic savory dish. DiMarco has been making pizzas for Central New Yorkers since 1992. Alan Truex, a regular customer from Dewitt, comes to the pizzeria multiple times a week to eat his favorite, cheese pizza. He says it is a close-knit community.

Alan Truex: Guys come right out and talk to you when you order pizza and paying. And they’re always right up front, which is great.

Rosa: Truex also brings his 11-year-old son, Nolan, so he can enjoy a slice.

Nolan Truex: This neighborhood is like the best. I know a lot of people. Everybody’s so nice.

Rosa: Cheese pizza is the most popular item on the menu. DiMarco starts by tossing and stretching out the dough and then places it on the peel. Fresh dough is made in the morning before the restaurant opens. It’s a process he starts with for every Mario and Salvo’s pizza order. Then comes Mario and Salvo’s homemade sauce, which is used to make every cheese pizza.

Gus DiMarco: It’s probably the top. That’s our top seller. Still plain cheese.

Rosa: Next, comes the grand mozzarella cheese, which is sprinkled all around the pizza. DiMarco places the pizza in a Blodgett oven. The oven is heated at 500 degrees, and the pizza cooks for 10 minutes. When it’s done, it cools, and then it’s ready to be served. DiMarco says he wants to make people smile.

DiMarco: It’s a neighborhood pizza shop. So you interact with customers all the time. You know them by their first names. And sometimes you ask people, you know, hey, how’d you do yesterday? Golfing or, you know if, you know, they’re golfers or whatever. So it’s just different aspects of, you know, knowing your customers.
