Kelsey Jones: Syracuse’s first cheese centered restaurant and bar is set to open this Wednesday in Eastwood. Lifelong CNY resident Abby Neuman thinks The Wedge will be a great addition to the city.

Abby Neuman: I feel like Syracuse has so much potential to be good, but there’s just never anything to do. So, like, whenever something new happens, especially like something different like The Wedge happening, I think it’s honestly just always going to benefit the city itself.

Jones: The restaurant will feature a rotating menu of cheesy dishes and local beverages for customers to enjoy. Syracuse University student and Boston local Millie Smith is excited for the change.

Millie Smith: Yeah, I think it’ll add a super unique aspect. I’ve never heard of a cheese bar. It sounds super new, super exciting idea, definitely very different from anything else that’s in Syracuse.

SYRACUSE, N.Y. (NCC News) — Syracuse’s first cheese centered restaurant and bar is set to open in Eastwood this Wednesday. The Wedge is Sarah Simiele, resident cheese connoisseur’s, newest project.

Simiele is currently the owner of the Curd Nerd, a small cheese and dairy shop located on James Street.

Central New York resident Abby Neuman believes the city will benefit from expanding dining options.

“Being from here my whole life, when it’s a birthday or you’re trying to go out to dinner just at the end of the week, it’s one of five restaurants that we pick from,” Neuman said.

She says widening the variety of restaurants will provide new opportunities for locals to enjoy going out.

“I feel like Syracuse has so much potential to be good, but there’s just never anything to do. So, like, whenever something new happens, especially like something different like The Wedge happening, I think it’s honestly just always going to benefit the city itself,” Neuman said.

The Wedge will feature a rotating menu of cheese forward dishes and local beverages for customers to enjoy.

Syracuse University student and Boston local Millie Smith is excited for the innovative concept.

“Yeah, I think it’ll add a super unique aspect. I’ve never heard of a cheese bar. It sounds super new, super exciting idea, definitely very different from anything else that’s in Syracuse,” Smith said.

The restaurant is located at 2802 James St., directly next to the Curd Nerd. Reservations are available beginning Wednesday, April 16.
